.Blast-freezing
Blast-freezing is a procedure during which foodstuffs are deep frozen to at least -18°C in a short period of time. Through the micro-crystallising of the water present in the foodstuffs, the cells remain intact to a high degree, and so as a rule, the original nutritional value is retained.
In two separate rooms in the Frozen Food Centre in Bocholt, up to 180 pallets or a complete lorry load of hanging meat are blast-frozen. At very low temperatures and with high air velocity, the products reach the desired core temperature in a very short period of time. Working with unpacked meat is one of the services of the Frozen Food Centre Bocholt GmbH.
